A Simple New Year’s Eve Cocktail

Are you looking for a quick and easy, but very delicious and elegant drink to serve this New Year’s Eve?  I have the perfect party cocktail for you.  A pomegranate bellini.  Three ingredients and you are all set to go.  You can make them ahead of time and have a tray of bellinis ready to go as your guests arrive, or set up a bar with the ingredients and have your guests help themselves to this festive drink.

Shopping list and how to make…….

Champagne flutes

1 bottle of Prosecco

1 16 oz bottle of Pom or other type of pomegranate juice

1 container of pomegranate arils OR if you can’t find a container of arils, buy a fresh pomegranate. The container of arils is a real time saver and I have found them at most grocery stores.

Add 1 TB of pomegranate juice to each champagne flute and a few arils….. then add the Prosecco and you are ready to go with a quick and easy holiday drink!

  1. Great cocktail! I mixed pomegranate juice with Prosecco years ago for Valentine’s Day but had totally forgotten about it! Love the arils on the bottom of the flutes – very festive!
