Summer Salad

Here is one of my favorite go to salads that is quick and easy and so very healthy!  I really enjoy making it in the summer when cucumbers and tomatoes are at their absolute best!  It has three simple ingredients and makes for a nice side salad with dinner, or it can be a very satisfying salad for lunch or dinner just on its own. Sometimes I get a bit tired of making traditional salads and this one allows you to use just your favorite healthy toppings.

The ingredients I have listed are for one individual salad. 

1/2 cucumber sliced however you like

1/2 of an avocado

1/2 of a 10 oz container of cherry tomatoes

1/4 cup of rinsed kidney beans or garbanzo beans (optional)

1/3 cup fresh corn off the cob (optional)

1 TB Newman’s Own Olive Oil and Vinegar dressing

1/8 tsp of salt & freshly ground pepper


 My favorite dressing to use on this easy summer salad is Newman’s Own Olive Oil and Vinegar salad dressing.  I think it tastes best to use an olive oil based dressing, which keeps with the lighter theme of this salad.  If you’ve never had this dressing before, I highly recommend trying it! It seriously tastes as good as homemade olive oil based dressings I’ve made at home, and it comes in handy on nights when you want something lighter tasting, but don’t feel like making your own fresh vinaigrette.

When having this for dinner I like to add a bit of fiber and some extra protein by adding about a 1/2 cup of kidney beans.


I find that this salad only needs 1TB of dressing, but feel free to pour that bottle on if you feel the need to have more.  After all, it’s your party and you should call the shots! 😉

No judgments will be made!

The version below is without the kidney beans, and honestly, if you don’t like kidney beans I think garbanzo beans would be a nice choice.


If you have some extra corn, maybe from dinner the night before, I think it makes a real nice addition to this fresh salad……especially if it is sweet corn. So delicious!


This salad just says summer to me!

Fresh cherry tomatoes from the garden, crunchy cucumbers, summer sweet corn, and a creamy ripe avocado……what’s not to like?!

I must tell you that my kids even enjoy this salad!
